Since food is a regular topic on the podcasts, Ryanne, I think your idea of Scavenger Life food category is great! Who doesn’t like good food that is home made, easy and frugal?
Here is my contribution:
Slow Cooker Basil Coconut Chicken Curry or “Chicken Stuff” as my husband calls it

For me, the best meals are a combo of:
-quick to make/little prep time
-are cheap
-easy clean-up
-taste goodFor me, the easiest meals are sandwiches. Take a minute or two to make, cheap ingredients, little or no clean-up, and to me they taste good. Also get me back to work quickly.
For a cooked meal, anything on the BBQ or campfire is easy – the Crock-Pot takes a good soaking and scrub to clean. I know the Instant Pot was a hot present this year, but those things take 30-45 minutes to clean properly! My BBQ just needs a good brushing, and the odd scrape down every couple months.

That looks delicious! I love me some spice curry! I think a food category would be a nice idea. Even if it was a sub-category under Random Thoughts. I’m about to try a collard greens instant pot recipe and can share how it turned out.

Sandwiches are amazing!!! But I cannot eat them anymore. I LOVE bread. I could live on it if my body would cooperate. But I also like to create in the kitchen. It’s an art form and my husband enjoys the results.

yes, i will absolutely make a food section. can’t believe we didn’t think of that before. i also LOVE sandwiches and would eat them all the time if i could (along with any bread and pasta), but my weight was not reflecting well with those choices. i swear, carbs are a drug.
our instant pot is super easy to clean, easier than a crock pot ever was.

I bought an instant pot because everyone here was raving about theirs so much. So far I’m not impressed. It seems like more trouble than just making soup in a soup pot or slow cooking in a slow cooker. I hope someone helps me learn the advantages. In the meantime, soup remains my favorite thing, especially in this cold winter we’re having. I make a pot of soup every Sunday. This is a recipe from a Taiwanese cooking class I took back in the 80’s. It remains my favorite for quick and easy to make, simple and above all delicious:
Asian Chicken-Corn Soup
In a soup pot place one chicken breast with the bones in it, plus 6 whole green onions, and 4 slices of fresh ginger root. Cover with water and bring to a boil. Simmer until chicken is done but not overcooked.
Remove the chicken, cool, debone, then chop or shred the meat. (I boil 2 breasts, keeping the meat from one for other recipes like chicken salad.) Also remove the onions and ginger; discard with the bones.
Return broth to a boil and stir in a mixture of 1/4 cup of cornstarch in 1/4 cup of water. Then add 2 whole cans of creamed corn, 1 tsp. Salt, 1/2 tsp of pepper and stir.
Then slowly stir in one direction in a circle 1 or 2 whipped eggs. (the recipe called for just the whites, but I hate to waste the yolks.) this will make pretty egg ribbons in the soup, plus add protein.
Add the chicken meat, return to a simmer then serve hot with a garnish of thinly sliced green onion tops.

I bought my Instant Pot after my slow cooker and rice cooker got ruined in the flood. I like it because it’s an all-in-one device. Whether it works as well as a dedicated crock pot, I can’t say for sure. And I don’t think it makes rice as well as my Zojirushi did. But I love the pressure cooking aspect. And I love not having 3 or 4 different devices in my limited space. But I understand what you mean. I had a crock pot that I bought at a yard sale for $2. I used that thing probably over 100 times. They’re awesome for soups and stews. But the advantage of the IP is speed, especially when cooking meats. A 3 lb pot roast only takes 80 minutes whereas before I would slow cook it for 8 hours.
I love soup too! I’m going to write this recipe down and make it this winter for sure. Thanks Linda!

PS – I love the Insta Pot recipes that are being shared, but we are sticking with the Crock Pot and the Pressure Cooker. Don’t need a third!

I like getting food cheap.
I always like having a bunch of canned meals readily available as well – not as easy as a sandwich, but Chef Boyardee is quick in the microwave!
Every once and awhile I’ll go crazy for a sale where canned foods are 4/$1 or 3/$1 or something ridiculous and stock up like crazy. Use to also love getting Banquet meals for $0.79 and filling up my freezer with Salisbury Steak…
Another favorite is hot dogs – they are cheap, and you can cook them anywhere.
I’ll eat cheap food all week, then crack on a Sunday and buy a $20 roast…

Amen on inexpensive. We hesitate on cheap though. We aren’t foodies, but we enjoy good food.
That is why we love to cook. Inexpensive good food!

I just thought of a perfect healthy Scavenger Life kitchen tool. Along with your Insta Pot (or Crock Pot)…get a Nutri Ninja.
Similar to the Nutribullet, I love being able to make quick, inexpensive meals that are healthy, quick to consume, and quick to clean up. I love that the container is what you mix and drink from, and I can make Bulletproof Coffee in there as well.
Example recipe I made this morning (and Veronica is going to have now):
1 sliced apple
Handful of leafy greens (Kale, Spinich, etc)
10 oz water
1 Vanilla Protein Powder scoop
1 packet instant oatmeal
1 scoop Super Greens Powder
1 scoop Beet powder
2 tblsp Collagen
1 tsp CinnamonBlend that sucker and enjoy!

Most people are grossed out by this, but this is my Nurtribullet breakfast of choice shake:
Anti-inflammatory Power Shake:1 Handful of Blueberries
As much spinach and/or kale as I can stuff in my nutribullet
1 raw egg
1 Scoop of Chocolate Protein Powder
A Splash of pure cherry juice
A Splash of Beet Juice
1 cup of unsweetened Almond Milk.I suppose it is just because I got really used to it when I was very active and motivated this past year, but I still love this shake.
As for the raw egg, my coworker/pseudo trainer recommended it once upon a time when I was eating hard boiled eggs every morning. I thought “Gross!!!”, and he said “keep eating those hard boiled eggs for a while and you’ll understand”. About a month later after I had to resist gagging on my latest hard boiled egg, I bit the bullet and cracked a raw egg directly into my blender. It was…freaking delicious! It added a creaminess to the shake and enhanced the chocolate flavor.
So just as he told me, don’t knock it till you try it…but you probably have to get thoroughly sick of eggs before you can try it.

By the way, I never put the 1 tsp. Of salt the recipe calls for because the canned corn has plenty of salt. I use half a tsp. Seems like Asian recipes are too salty.
